It is used in the preserving and curing of meats and most commonly used in ham and sausage making, smoking, canning, etc. The curing component inhibits the growth of bacteria, specifically clostridium botulism, and helps preserve the color of cured meat. Propylene Glycol is used to prevent caking and it is pink in color by means of a small amount of red food color added so that this product is not mistaken for regular salt.
